2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 tsp nutmeg
1/2 tsp sea salt
2 eggs
1/4 cup avocado oil
1 tsp vanilla extract
1 tsp apple cider vinegar
1 cup soy milk
1/2 cup unsweetened applesauce
3/4 cup coconut sugar
1 cup shredded carrots
(I blended the carrots and the applesauce together)
Preheat oven to 350 degrees
IN a small bowl mic together milk and apple cider vinegar and let sit for 10 minutes.
NEXT, In a large bowl whisk together all wet ingredients and add in the milk/vinegar mixture.
Add in all dry ingredients and whisk until smooth
Fill muffin tray and bake for 18 minutes for large muffins and about 8-10 minutes for mini muffins.
