3 eggs
2 1/2 cups sugar
1 cup plus 2 tbls of vegetable oil
1 1/2 cups milk
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
1 tablespoon plus 1 1/2 teaspoons of poppy seeds
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons almond extract (optional)
3 cups flour
I did not use almond extract because it was a minor amount and the bottle at the store was $7 so instead I put a raw almond on top while baking then took it off before eating.
Mix all ingredients in a big bowl. Pour in muffin cups in a muffin dish. Bake at 350 degrees for about 15-20 minutes. Make until golden brown or toothpick comes clean.
This recipe makes about 3 dozen muffins. I put what we didn't eat in the freezer in a bag so if we are in a rush one morning we can grab one to-go.
