Sweet Potato Casserole Recipe:

Ingredients:
Sweet Potato Mixture:
3 cups cooked and mashed sweet potatoes (I used about 5 medium sweet potatoes) [cook sweet potatoes in oven at 350 for about an hour until super soft- poke holes in them before baking but put something underneath so they don't poop all over your oven]
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 eggs, beaten
1/4 cup butter, melted

Topping:1 cup brown sugar
1/3 cup flour
3 Tablespoons butter, melted
1/3 cup flour

Directions:Preheat oven to 350 degrees F. In a large mixing bowl, combine mashed sweet potatoes, sugar, salt, vanilla, eggs and butter. Pour mixture into a greased 9×13″ baking dish. In a small bowl, combine brown sugar, flour, pecans and butter to make topping. Sprinkle topping on top of sweet potato mixture. Bake for 30 minutes.
