Thyme Roasted Carrots

 1 1/2 pound medium carrots
3 tablespoons olive oil
1 tsp salt
1/4 tsp pepper
6 thyme sprigs

Preheat oven to 400. line baking sheet with foil
Peel carrots. Arrange carrots on sheet. Drizzle with oil and sprinkle S&P. Scatter the thyme sprigs among the carrots and roast until the underside are golden and caramelized 30-40 minutes. if they can't be easily pierced with a fork yet, shake the carrots and continue to roast 5-10 minutes longer.
