Oven Baked French Toast

1 loaf sliced brioche bread 6 eggs 2 cups whole milk 2 teaspoons vanilla extract 1 1/2 teaspoons cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon kosher salt 3/4 cup granulated sugar 4 Tablespoons room temperature butter (unsalted) 1/4 cup light brown sugar (divided In a large mixing bowl add eggs, milk, granulated sugar, cinnamon, nutmeg, vanilla and salt. Whisk until everything is combined. Take 1 slice of bread and spread a little less than a tablespoon of butter on top. Sprinkle with a couple teaspoons brown sugar, just enough to cover the slice of bread. Repeat with the remaining bread. Arrange in a round baking dish. Pour the egg mixture over the bread. Cover and refrigerate for 2-3 hours or overnight. Bake at 350 degrees F for 40-45 minutes covered and 10-15 uncovered Sprinkle with powdered sugar and/or maple syrup.

Oven Toasted Ravioli

12 round frozen ravioli, thawed 1 egg 1 Tbsp milk 6 Tbps Italian bread crumbs 2 Tbsp grated parmesan cheese cooking spray Preheat oven to 375 degrees. Whisk together egg and milk in shallow bowl. In another bowl or pie plate, combine bread crumbs and parmesan cheese. Dip ravioli in egg and then in bread crumbs. Place on baking sheet. Repeat until all ravioli are coated. Spray ravioli with cooking spray. Bake for 12-15 minutes or until golden brown. Serve with warm marinara or pesto.

Cream Cheese Chicken Taquitos

Ingredients ▢ vegetable or canola oil for frying ▢ 3 cups shredded cooked chicken ▢ 6 ounces cream cheese softened ▢ 1½ cups baby spinach stems removed and chopped ▢ 1½ cups shredded Colby Jack cheese or Mexican blend cheese ▢ ½ cup salsa store-bought or homemade ▢ ⅓ cup sour cream ▢ salt and pepper to taste ▢ 12 (6-inch) corn tortillas (or flour tortillas) Toppings ▢ shredded lettuce, chopped tomatoes, sour cream, Pico de Gallo Instructions Fill a saucepan with ½ inch of oil and heat over medium heat to 350 degrees F. Meanwhile, in a large bowl mix together chicken, cream cheese, spinach, Colby Jack cheese, salsa and sour cream. Add salt and pepper. Once oil is hot enough, add a few tablespoons of chicken–cream cheese mixture to the center of a tortilla and spread out. Roll tortilla up and use tongs to place it seam side down in hot oil. Cook until golden brown on both sides, 2–3 minutes per side. Set on paper towels to drain. Repeat
